Egg Salad Sandwich

Enjoy a tasty and easy-to-make sandwich, perfect for a quick breakfast or a flavorful and fresh snack during office breaks.

Ingredients:

  • 4 hard-boiled eggs
  • 2 spring onions
  • 1 slim celery stalk
  • 50g mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • salt
  • pepper
  • ¼ teaspoon sweet paprika
  • valerian leaves or microgreens
  • sliced rye or wholemeal bread

Preparation:

  1. Finely chop the celery and spring onions.
  2. Mix them in a bowl with mayonnaise, mustard, and lemon juice.
  3. Peel and finely chop the hard-boiled eggs into cubes. Add them to the mayonnaise mixture in the bowl. Season with salt, pepper, and sweet paprika, and mix well.
  4. Spread the egg salad onto a slice of bread, sprinkle with green leaves or microgreens, and cover with another slice of bread.
  5. The egg salad sandwich is perfect for breakfast, paired with a small yogurt from Lăptăria cu Caimac.
