Warm Zucchini and Roasted Pepper Salad with Ayran Dressing

This time, we invite you to try a tasty and satisfying salad with Ayran dressing, perfect for hot days or when you crave a quick but healthy lunch.


  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 zucchini
  • 50g arugula
  • 100ml Ayran from Lăptăria cu Caimac (a type of yogurt-based drink)
  • 2 tablespoons olive oil
  • ½ teaspoon sumac
  • ¼ teaspoon chili flakes
  • salt
  • pepper
  • mint leaves
  • 10g roasted sunflower seeds


  1. Wash the vegetables. Slice the bell peppers into wide strips. Slice the zucchini. Quarter the red onion.
  2. Heat a pan or cast-iron grill over medium heat. Place the bell peppers, zucchini slices, and onion on the grill, and let them brown on each side.
  3. Remove them from the grill and season with salt and pepper.
  4. Prepare the dressing. In a bowl, mix 100ml Ayran from Lăptăria cu Caimac with olive oil, salt, pepper, sumac, chili flakes, and chopped mint leaves.
  5. In a large bowl, place a bed of washed and dried arugula leaves. Arrange the grilled bell peppers, zucchini slices, and onion on top.
  6. Drizzle the dressing over the vegetables, sprinkle with roasted sunflower seeds, and serve the salad.



Depending on your preferences, you can add other vegetables as well.
