Indulge in a delicious Mediterranean pasta salad with a delightful yogurt dressing. Ingredients (serves 4):
- 150g pasta (shells/fusilli/penne rigate)
- 100g cherry tomatoes
- 2 small cucumbers
- 40g pitted Kalamata olives
- 1 red onion
- 50g feta cheese
- 100g Yogurt of 10 from Lăptăria cu Caimac
- 20ml olive oil
- 20ml lemon juice
- 1 clove of garlic
- Greek basil
- thyme
- rosemary
- salt
- pepper
Preparation:
- Peel the cucumbers, cut them in half lengthwise, and remove the seeds with a spoon. Cut the cucumbers into small cubes.
- Cut the cherry tomatoes and pitted Kalamata olives in half.
- Slice the red onion into thin strips and crumble the feta cheese.
- In a small bowl, mix the Yogurt of 10 with lemon juice, olive oil, crushed garlic, herbs, salt, and pepper.
- Cook the pasta in salted water until al dente. Drain them from the hot water, rinse them under cold water, and place them in a large bowl.
- Add the cherry tomatoes, cucumbers, olives, sliced red onion, and crumbled feta cheese to the cooked pasta. Mix well and then pour the yogurt dressing over it. Mix again. Season with salt and pepper if needed.
- Serve the pasta salad in plates and garnish with fresh basil leaves.
