Festive starter

Taste awakens emotion and memories. Lăptăria cu Caimac’s products originate from the sun soaked Bărăgan Plain and carry with them the magic of my happy childhood spent in Roșiori, a small village in Ialomița county. And that’s because the fancy dairy farm is located in Drăgoești, just at a stone’s throw away from my grandmother’s house. Many times, as a child, during torrid summers I used to jump in a carriage to Drăgoești, at my cousins’ grandparents, to cool off in the lake behind our yard.

Oh, I have not been to Ialomița, my childhood heaven for way too many years… but I could never forget the fields with dramatic shades of yellow and the suites of thistles, cornflowers and poppies, the scents and colours melange, lonely poplars on the side of the road, quiet cow herds and colourful butterflies!!

Lăptăria cu Caimac’s products have brought nostalgia flavours in my heart and I have been overwhelmed by a potpourri of happy memories, and the joy of cooking with such tasty and natural products has been immense!

The festive starter with dried curd cheese and peas that I have prepared today is ideal for holiday dinners and, moreover, is utterly delicious. Bon appétit, or rather, dig in!

Ingredients:

  • 225 g Lăptăria cu caimac dried curd cheese
  • 3 eggs
  • 400g canned sweet peas
  • 300g soured cream (15% fat)
  • 200g flour
  • 1 sachet of dry yeast
  • nutmeg
  • salt
  • white pepper
  • fresh dill
  • fresh cheese cream (for decoration)

Preparation:

Beat the eggs in a bowl with a pinch of salt, then add the grated curd cheese, the strained peas, sour cream, finely-chopped dill and, at the end, the flour mixed with yeast. Pour the flour but gradually, until the batter reaches the desired consistency. Season with salt, pepper and nutmeg, to taste.

Leave it to rest for 20 minutes, then pour it into a flour-sprinkled tray. Bake in the medium-heated oven, approximately 40-45 minutes, until golden on top (try it with a toothpick). Cut in squares only after completely cool and decorate with cheese cream and dill.
