Enjoy a balanced combination of taste and nutrition with these vegetable and cheese muffins. Each muffin is packed with healthy ingredients such as peas, corn, and bell peppers. The layer of melted cheese on top adds a delightful flavor to every bite.
Ingredients:
- 150ml milk
- 100ml sunflower oil
- 250g flour
- 1 packet baking powder
- ¼ teaspoon baking soda
- 1 teaspoon dried basil
- ½ teaspoon smoked paprika
- salt
- pepper
- 200g mixed vegetables (peas, corn, bell peppers)
- 140g grated Rotocol de cașcaval from Lăptăria cu Caimac
- mixed seeds for sprinkling on top
Preparation:
- In a bowl, mix together the flour, baking powder, baking soda, dried basil, smoked paprika, salt, and pepper.
- In another larger bowl, beat the eggs with a whisk. Add the milk and oil and mix well. Incorporate the dry ingredients into the wet ingredients.
- Add the vegetables and mix them in. Then add the grated cheese and incorporate it into the muffin batter.
- Prepare a muffin tray with baking liners. Divide the batter into the tray and sprinkle mixed seeds on top.
- Bake the muffins at 180°C (350°F) for 20-25 minutes.
Tips:
Depending on your preferences, you can change the mix of vegetables in the muffin batter.
